Sago (/ˈseɪɡoʊ/) is a starch extracted from the spongy centre, or pith, of various tropical palm stems, especially those of Metroxylon sagu.
Sago is often produced commercially in the form of "pearls" (small rounded starch aggregates, partly gelatinized by heating).
